INGREDIENTS
1 Berks Hickory Smoked Berkshire Ham, bone out, about 8 pounds
1 can cola soda
1/2 cup dark brown sugar
1 teaspoon onion powder
1 large red onion thinly sliced
Fresh herbs for garnish
PREPARATION
Preheat the oven to 325 degrees. Score the ham using a sharp knife into a diamond pattern. Put the ham, onions and 1/4 cup water in a 9x13-inch baking dish.
In a medium saucepan, combine the soda, brown sugar and onion powder and bring to a boil over medium- high heat, stirring every 5 minutes. Cook until reduced by half and has begun to form a glaze, about 10-15 minutes.
Brush the ham with some of the glaze, cover the ham with foil and bake for 1 hour. Uncover the ham and baste with the pan liquid and brush with some glaze. Cook for an additional 1 hour, basting and brushing the ham after 30 minutes. Brush the ham with the pan liquid before serving. Garnish with fresh herbs.
